Hello just diving into solar and have a basic question. I have 2. 100-watt panels tied to an Epever Triron 30 amp charge controller and that is tied to 2 6v FLA batteries (in series). Even on the brightest days, I seldom see the wattages produced from the panels much higher than the load connected to the controller ( sometimes 2 times). I am to assume the power being generated by the panels is proportional to the load? For example, if I have a 30-watt load attached to the controller, I see at best 60 watts being generated at the panels... So where is my other 140 watt capacity at?

It's going to be proportional to how much energy is needed to charge battery and whatever load you have. As well as to how many Amps the battery can absorb at once.
Also panels almost never reach their max rating especially in winter.
