These equalizers say they are for 4 batteries in series, but would it work for 4x 12v 100ah batteries in 2s2p or 2p2s?

Or hypothetically would it work with 4 batteries in parallel? Or for some reason for it to work, do all the batteries have to be in one series string?

I have read and seen in videos, Will included say that there can be problems with over three batteries in parallel.

Yep, but balancers won't do anything whatsoever to help unless you're specifically looking to lighten your wallet and get absolutely nothing for the money.

Please see link #5 in my signature. That document is a wealth of knowledge, and they discuss the specifics of wiring batteries in parallel.

Do they help batteries in series?

Yes. That is their purpose. They seek to equalize voltages by moving charge from higher voltage elements to lower voltage elements. Most achieve their rated current at 1V difference, e.g., if a unit claims 2A balance current, that will only be attained at 1V deviation. When at 0.1V deviation, balance current will be closer to 0.2A.

I use two of these for my 2S2P batteries, works well. But I use the units for two batteries, (2 sets of wires, not four).
