How much controller and inverter on an expandable starter system?

Situation:
I go camping now for 3-4 days at a time with a portable bank to charge up camera.
I want to extend this to travel for longer and farther away places.
I'm going to add over time as I can.

Items involved:
6' x 12' V nose trailer w/pickup
I have a little less 70 sqft of space to work with.

I want to get 1-100w panel, 1 battery and expand it later.

I'm trying to figure out which mppt controller and inverter I will need for the long haul.
Batteries it's suggested to set up in series to reduce cable size and increasing the Ah.

However:
Having 1 battery to start it will only be 12v.
but does it really needed to go 24v. See whole project below.


The whole project goals:
Panels; roof system mono parallel
As with a little less 70 sqft. Options to add portable flexible on site panel if needed

Most I've seen everyone seems to go around 400W-12v panels to fit the basic needs.
Cooking, shower, lights, heat, ac. TV and PC.

I want to charge off the pickup but not right away.
The average ah of battery is about 400.
I think I probably need about 600+ah of battery as the pc and tv is a hog.


Conclusion:
I was looking at starter kits however I don't think their expandable. The controller won't handle more.
I'm need a mppt controller and inverter size suggestions.
Suggest a brand if you like.
Off brand is ok. It's just a name.


This just an example of what I was looking at but as you can see the controller won't do.
