Planning on integrating Renogy DCC50S MPPT with DC-DC charging, as well as using their 2000 watt inverter charger.

I haven't been able to find any wiring scenarios from Renogy showing this MPPT with an Inverter Charger, only an inverter. Is there an issue with MPPT charging the batteries while I'm also plugged into shore power? It would be great if I don't have to manually shut off solar while plugged in.

No. Usually no issues, charge current limit will depend on battery, provided the total expected current that can be accepted by the battery is not exceeded
Note the DCC50 solar input is limited, thus only '12' volt panels can be connected, V max 23volts ( single or a number in Parallel.
