Upgrade Inverter but not panels

I have an old StarInverter PVP 2800 XV grid connected that was installed by the previous owner in 2006 when the house was built.
It seems to be dying. the little display has gone from 1800 to 1300 on a sunny day. I think some of the panels are
gone or the inverter is gasping for air. So. Can I replace the 2.8kw inverter with an 8kw and swap out panels later?
They are 190Watt (i think) and 15 of them. And do it my self? On the inverter anyway.?

I'm not familiar with your inverter or the new one. As long as your panels produce the minimum voltage required by the MPPT, and the voltage doesn't exceed the Max PV Input Voltage, you should be able to swap in the new unit.
