What amp hour battery ?

I have a

130a solar panel

30a charge controller

1000w 12v inverter

and I want to run a 700w water pump for 5 minutes at 3 times a day.

My question is …… what size sealed lead acid battery should I use ????
I’m thinking 100Ah ????

What is the startup power surge of the water pump. Some pumps start up surge is 4x the running current.

700w / 12v x .25 hours = 15Ah

So if it really is as you say, yes 100Ah is good and leaves room for efficiency losses and <50 DoD.

I have not analyzed your solar input at all or whether that is adequate to recharge it.
