My Bluetti shows a draw of 325 watts with nothing plugged in and all lights in my rv off.

Fridge is on propane and so is water heater.

Anyone have an idea why it’s showing an output?

I know it seems dumb, but have you tried fully turning the unit off and on?
Like holding the power button down until the unit shuts all the way down?

Edit:
While the unit is showing that load, is the battery percentage going down?

I have shut it down completely and rebooted, I’ve also ran it completely dead then charged to 100%.

Yes it does show the battery percentage going down. My last test it was at 100% at 3am and with nothing plugged into the trailer and all lights off it was totally dead by 8am

How do you have it set up?
Through an junction box/breaker panel in the trailer or just directly connected in line via an extension cord in the trailers circuit?

And when you say nothing "plugged in" do you legitimately mean that there is nothing at all plugged into the unit?
Or just that everything you know of is turned off?

I have the RV plugged directly into the RV receptacle on the Bluetti.
Tv and router are unplugged from the power strip and all lights are off, nothing plugged into any receptacle at all.

Do you still have the same drain if you unplug the RV plug from the bluetti?

So you have some phantom drain in the RV, possibly some kind of trickle charger to keep another battery topped off?
No, when I unplug the RV there’s no drain.

When things are in stand by waiting for something to happen like turn on. there is a passive usage. Like a TV can use 0.2Amps, auto coffee pot 0.02 amps, your fridge and water heater still have electronics in them measuring temp and waiting. its likely there using about 0.1 Amps each.
So even if things are "Turned off/'not running" They will still pull some power. i went around my own home and measured what "Turned off" things where using. They is likely the same case for you.
If you have a TV, Fridge, Water heater, Phone charger, laptop, Etc. all these tiny usages can add up fast... My house when everyone is sleeping and things are off pulls an avg of 6.32 Amps.

Even on propane rv fridges draw power for the electronics to control the propane. They are not known for their stinginess of power. Try unplugging the fridge and see what happens to your power draw. Report back your findings please.
