At the risk of asking the dumbest question ever:
Is there any problem when connecting the solar panels in series while sun is shining? I'm not talking about connecting them to a consumer/battery, I'm just talking about the connection between two solar panels. Could it potentially cause any issues to the solar panels (because it already produces electricity). Shall I better cover them with a blanket? Sorry for this really stupid question.

No, this can potentially be a real issue. DC current flowing out of the panels has the ability to arc much greater than AC can, so you should not unplug a MC4 connection while current is flowing. Flip the breaker, or disconnect the battery though as DTh illustrates and you are good to do as you please. Make it a habit that flipping the breaker is always the first, and the last thing you do.
