The two strings will be separate runs back to the inverter, a separate red and black for each sting. There are 2 PV inputs on your inverter each string will connect to each of the inputs

Ok I'm almost there. I think my confusion is from watching Will and seeing his PV cables run into a breaker and then seeing a different cable from the breaker/disconnect to the inverter. What is this cable?

There are two breakers in that box.
Each string goes to a breaker. And then to the solar inputs.

That cable looks to just be 2 wires twisted together to keep them neat. For compliance with the NEC(national electric code) that wiring should be in conduit.
