I can't seem to find an answer to this.

If the fuse to the positive battery terminal blows or if the battery bank gets depleted all the way, will it destroy the solar charge controller since the solar panels are connected with no power coming to and from the battery bank?

If so, how do you wire it so that the solar panels get disconnected in the event where there is a problem with the battery bank?

What’s the max VOC of the array with temp factored in? What’s the rating of the SCC?

It won't hurt the scc.
The warning is there to protect the scc from someone hooking up panels BEFORE hooking up the battery bank, stabilizing the output voltage.
After te scc is set on a battery voltage, the panels most likely will not harm in any way if batteries disconnect.
